Preview of Starblossom ‘17

Bottle Notes: Redbyrd’s Starblossom focuses primarily on European bittersweet cider apples, with a portion of the cider aged in French and American oak barrels. The apples for this cider come from our own biodynamic apples and from orchards we partner in care for at Tree Gate Farm and Newell Farm, and Hammerstone Orchard. Serve at cellar temp.

Tasting Notes: fennel, vanilla cream, leather, orange peel with full bodied tannic structure

Production Notes: Blended after pressing. Pressed Oct-Nov. 2017. Fermented to dry with champagne yeast. 50% barrel fermented in 2 american oak and 1 french oak barrels and aged on primary lees 7 months, 50% tank fermented and aged on primary lees 7 months.

Unfiltered, unfined, force carbonated. Bottled July 2018.

Apples: Primary Apples: Browns’ Apple, Sweet Chopin, Domains, Sweet 16, Spigold, Porter’s Perfection, Binet Rouge, Ellis Bitter, Redfield, Golden Russett, Somerset Redstreak and many more.
