About

Redbyrd Orchard Cider is a small, family-run, biodynamically-managed farm and cidery. We focus on heirloom, wild seedling, and European cider apples to produce distinct hand-crafted orchard-based ciders. Deva and Eric spent years in the Finger Lakes winemaking and vineyards scene, and Eric is currently the Orchard Manager at Cornell University. In 2010 we settled into our true passion and are proudly growing apples and producing ciders for your enjoyment.

A rack-and-cloth press at our cidery in Burdett

BLENDING

Several ciders featuring 1 or 2 varieties, most with over 20 varieties

FERMENTATION

Cool and slow in the fall and early winter; finished and bottled still or carbonated using a bright tank, or naturally sparkling with a secondary in-bottle fermentation, with possible in-bottle lees aging and disgorging

AGING

We age blends; we age on the lees 9 to 18 months; some ciders in oak
