We are thrilled to offer you first dibs on an epic, intimate cheese and cider pairing experience! The cheeses will be curated by local, legendary cheesemonger, Rachel Freier - creator and creative behind the FLX Cheese Club - for a one of a kind evenings here at the Cider House! Seating will be limited for this tasting plate and ticketed event, and be sure to make your reservations early.
Rachel is an American Cheese Society Certified Cheese Professional. She will talk
about microbes, cheese rinds and how to cook with cheese for as long as you let her. Rachel worked as a hospitality professional for many years until she discovered her true calling in cheese. Rachel was part of the 2012 opening crew for the West Village staple, Murray’s Cheese Bar, on Bleecker Street where she developed their cheese & beverage program over the course of 5 years. There she created the acclaimed Murray’s Cheese Bar’s Monger’s Table program; a 10-course cheese tasting menu paired with unique beverages and cider.
Inspired by the stories of cheese and cheese makers, beverage producers, and all like-minded and spirited industry folk; Rachel embarked on a culinary path producing pop up cheese and cider dinners, writing cheese recipes, consulting on cheese and beverage menu’s and ever evolving and creative cheese & beverage pursuits. As a beverage ambassador, inspired by trips to NY cideries in 2014, Rachel became an avid NY cider supporter. Rachel joined the NY Cider Association co-producing NY Cider Weeks. Rachel’s love for cider brought her to the Finger Lakes in 2020, the move has deepened her appreciation for regional food, cider, wine and community. In 2023 Rachel started her own local cheese catering and events company called The Cheese Club FLX, offering cheese catering services, cheese events and cheese education. The Cheese Club collaborates with local farms, wineries, cideries and hospitality professionals to create unique cheese experiences. In 2024 she launched a curated Cheese Box subscription to share her favorite cheeses and pairings.
Dedicated to cheese agritourism and travel, Rachel helped map out 108 New York
State cheese producers and cheese shops for the NYS Cheese Council hosted on her Global Cheese Map project. Rachel actively serves on committees for the American Cheese Society.

- What to expect: We will be hosting an intimate and fun cheese with cider pairing experience. This is a tasting plate where we can learn and explore together the world of cheese, cider and cheese and cider together. Seating is limited but you can purchase up to 6 seats total. We are thrilled and honored to be working with Rachel again, this one will be fun! Hope to see you there!
